Ratatouille 6-800

Cuvântul “ratatouille” provine din occitanul “ratatolha”, care înseamnă “a amesteca”. Ratatouille Niçoise a fost inițial un fel de mâncare preferată de agricultorii din Sudul Franței, preparată cu legume proaspete de vară, şi tocmai de aceea originalul nu conține vinete, care se găseau în altă perioadă a anului decât restul ingredientelor. Evident, nu există o rețetă exactă, fiindcă în fiecare casă se pregătea puțin diferit, fiecare punându-şi amprenta în alt mod. Are multe rude în toate popoarele, ca de exemplu Caponata Siciliană, Imam Bayildi, Tocăniţa de legume, etc. Însă cred că toată lumea cunoaşte varianta cu numele de Ratatouille, datorită celebrului film de animaţie regizat în 2007 de Brad Bird.

Ingrediente

1 vânătă mare
2 cepe
2 ardei graşi
2 dovlecei
4 roşii decojite
3 căţei de usturoi
câteva linguri ulei măsline
un bucheţel de cimbru, oregano şi rozmarin
sare, piper
frunze de busuioc

Mod de preparare

Legumele se taie în cuburi mari. Se sotează ceapa tocată grosier, până devine translucidă.
Se adaugă vânăta şi se găteşte preţ de 5-8 minute, la foc mediu, după care se pun şi ardeii graşi, şi se continuă gătitul încă 5-10 minute.
Apoi se adăugă dovleceii, roşiile, usturoiul, sărea şi bucheţelul de ierburi.
Se lasă totul încă 10-15 minute, după care se ia de pe foc şi se scoate bucheţelul de ierburi.
Poate fi servit simplu sau ca şi garnitură, sau ca aperitiv, pe felii de pâine prăjită.
Se decorează cu frunze de busuioc.[/note]

Ratatouille Niçoise was originally the favorite dish of the farmers in Southern France, prepared with fresh summer vegetables, which is why the original recipe does not contain eggplants, which could be found in a different period of the year than the rest of the ingredients. Obviously, it doesn’t exist a standard recipe, because every house was preparing the ratatouille a little differently. It has many “relatives” in all the nations, such as Sicilian Caponata, Imam Bayildi, the common vegetable stew, etc. But I think everyone knows the version named Ratatouille, due to the famous animated film (2007) directed by Brad Bird.

Ingredients

1 large eggplant
2 onions
2 bell peppers
2 zucchini
4 peeled tomatoes
3 cloves of garlic
a few tablespoons olive oil
a bunch of thyme, oregano and rosemary
salt and pepper
basil leaves

Preparation

Cut the vegetables into large cubes. Heat the oil and cook the onions over medium heat and let them go translucent.
Add the eggplant and cook for 5-8 minutes, then add the bell peppers, and continue cooking another 5-10 minutes.
Then add the zucchini, tomatoes, garlic, salt and the bunch of herbs.
Let cook for another 10-15 minutes, then remove from the heat and remove the bunch of herbs.
It can be served simple, as a side dish or as an appetizer on slices of toasted bread.
Decorate with basil leaves.[/note]

Au o nota de magie fotografiile tale, iar ori de cate ori le privesc gasesc in ele o adevarata poveste: o poveste despre pasiune, o poveste despre un suflet cald si frumos care reuseste sa transmita o mie de cuvinte printr-o singura fotografie! <3
